Echo State Park, Utah
Set along the shores of the 1,394-acre Echo Reservoir just off I-80, this park makes an easy stop for boating, kayaking, and paddleboarding on your way through the Wasatch Back. Cast a line for trout and perch, pitch a tent or hook up at one of the campsites, or rent a lakeside cottage for the weekend. Built during the Great Depression, the reservoir still anchors this quiet stretch of Echo Canyon near Coalville.
